Subject: re: Matzo Brei
pcarness%deimos@ads.com asks for a recipe for Matzo Brei.
It's one of the easiest things to make and since Passover's
over, I think you'll have the monopoly on Motzo...
8 Matzos
6 eggs
1 quart water
butter or vegetable oil
salt
pepper
onions (optional)
If you're using onions, brown them in a frying pan w/ the oil.
Break and beat the eggs in a bowl.
Boil the quart of water.
Break the matzos into small pieces (1"x1" or smaller) and put them
into a collandar.
Pour the boiling water over over the matzos and let it drain out.
Grease a frying pan w/ the butter or oil and throw in the now soggy
matzos.
Throw in the eggs and onions and fry away until the eggs aren't
visible as such, and everything is nicely brown.
Add salt and pepper. It's one of the few recipies for which I've actually
found salt to help.
That's all... Enjoy!
