Somebody requested a recipe for a cake which consisted of a lot of
fruits and nuts bound together with a minimum of batter/cake. I
promised to dig out a recipe but when I tried to mail it bounced - I
may have copied the address down wrongly.
Anyway, here is the recipe.
Fruit and Nut (Cake)

7oz Brazil nuts, whole
5oz Walnuts, halved
3oz Almonds
4oz Dried Figs, chopped
4oz Dates Dried, Chopped
6oz Mixed Glace Cherries
3oz Raisins
3oz Candied Peel
Basically I don't think it matters that much what type of fruit & nuts
you use. Leave out any you don't like and add something else instead.
When my mum makes one of these she leaves out the dates (she and I are
the only ones in the household who eat it and I don't like dates).
Mix all the above in a large bowl.
Batter ingredients.
Grated rind and juice of one lemon
3oz Plain Flour, sifted
0.5tsp salt
0.5tsp baking powder
1tsp Vanilla Essence
3oz Soft Brown Sugar
3 Eggs
Whisk the batter ingredients together.
Mix the fruit/nuts into the batter ensuring that everything is well coated.
Pour into a lined tin and bake at 150C / 300F / Gas Mark 2 for 2 hours.
