The Easiest "Candied" Yams:
Ingredients:
2-3 whole yams
1/2 stick margarine
mini-marshmallows
Procedure:
Wash yams and prick with a fork
Microwave yams following microwave manufacturer's
instructions (it's just like "nuking" a potato)
When the yams are done you'll have to let them sit for
a while to complete the cooking process.
While yams are sitting:
Melt 1/2 stick margarine (more if you're using more
than 3 yams)
Stir in 1/4cup brown sugar
Peel and dice the yams (they'll be a little hot so be careful)
place in a covered casserole dish
Pour margarine mixture over yams and stir to coat
Before serving, toss in marshmallows, to taste,
and stir (marshmallows will melt slightly
as they're tossed with the hot yams)
Sprinkle more marshmallows on top to garnish
You can reheat the yams in the oven or microwave if
you're taking them to a potluck dinner (just wait to
put the marshmallows in until the dish is hot and ready
to be served).
