Subject: LACTO: Baked Cauliflower
BAKED CAULIFLOWER
1 large white cauliflower
2 Tbsp. butter
4 green onions, finely chopped
2 Tbsp. flour
1 C. milk
1/2 tsp. salt
1/4 tsp. white pepper
Dash Tabasco
1/4 C. seasoned bread crumbs
2 Tbsp. grated Parmesan
Cook cauliflower whole, in boiling, salted water, about 20 minutes.
Drain & place in baking dish. In small skillet, melt butter & saute
green onions over medium-low heat for 5 minutes. Blend in flour & cook
for 3 minutes over low heat. Slowly stir in the milk & simmer until
smooth & thick, stirring constantly. Add the salt, pepper, & Tabasco &
then pour the sauce over the cauliflower. Sprinkle with the bread
crumbs & cheese. In a preheated 375 degree oven, bake about 20 minutes
or until slightly browned. Serves 4-6.
