Subject: OVO-LACTO: Dutch Oliebollen
Measurements are in grams and liters, because this is a Dutch recipe,
but can be easily translated with the monthly posting. I made it here
in the states, and it came out great.
Basic Oliebollen (Dutch newyears eve treat)
4.5 dl milk
500 g flour
1 egg
10 g salt
35 g soft butter
30 g yeast
30 g sugar
vegetable oil
Mix as much milk as needed through the flour so that the flour stops
flying around. Make sure there are no chunks.
Mix 1 egg, the salt and the butter through the dough.
Heat the rest of the milk till it is 'half warm'. Mix the yeast with
the sugar in the milk. Mix this with the dough. Let the dough sit
covered for 1 hour in a warm place, so it can rise.
Heat oil in a pot for frying. Use two spoons to form a little balls
from the dough and put it in the oil, for 5-7 min. till they are gold
colored. Note: Put the oliebollen in batches in the oil, not all
together.
This recipe makes about 35 oliebollen.
Eat covered with powdered sugar warm or cold. A great (but filling)
snack.
