  1. SURPRISE BRAN MUFFINS
  2. ---------------------
  3. 2 1/2 cups bran flakes
  4. 1 1/4 cups milk
  5. 1/3 cup margarine, melted
  6. 1 egg, beaten
  7. 1 1/4 cups flour
  8. 1/2 cup sugar
  9. 1 tablespoon baking powder
  10. 1/2 teaspoon salt
  11. 1/4 cup Raspberry preserves
  12.  
  13. Combine cereal and milk, let stand 2 minutes. Add margarine
  14. and egg; mix well. Add combined dry ingredients, mixing just
  15. until moistened. Spoon into greased medium-sized muffin pan.
  16. Make a deep indentation in top of batter for each muffin. 
  17. Fill with preserves. Bake at 400 degrees F for 25 minutes.
  18. Makes 1 dozen.
