BLUE RIBBON BANANA CAKE

I%1, cup, shortening, (3/4 cup + 1/4 cup)
I%2, cups, sugar, (1 1/2 cups + 1/2 cup)
I%1, cup, bananas, mashed
I%1/2, cup, buttermilk
I%2 1/2, tsp, vanilla, (1 tsp + 1 tsp + 1/2 tsp)
I%3, large, eggs, (2 whole eggs + 1 egg white)
I%3/4, tsp, salt, (1/2 tsp + 1/4 tsp)

I%1, tsp, baking soda
I%1, tsp, baking powder
I%1, cup, pecans, chopped, (1/2 cup + 1/2 cup)

I%1/2, cup, cream

R%CAKE:

R% Cream together 3/4 cup shortening and 1 1/2 cups sugar until fluffy.
R%Add 2 whole eggs and beat 2 minutes at medium speed. Add 1 cup mashed
R%bananas. Beat 2 minutes on medium speed. Sift together dry ingredients:
R%1/2 tsp salt, 2 cups sifted flour, 1 tsp baking soda, and 1 tsp baking
R%powder.
R%
R% Add to creamed mixture along with 1/2 cup buttermilk and 1 tsp
R%vanilla. Beat for 2 minutes and then stir in 1/2 cup pecans.

R% Turn into 2 greased and floured 9" layer pans. Sprinkle 1/2 cup
R%coconut on each layer. Bake in a moderate (375 degree) oven for 25 to
R%30 minutes. Remove from pans. Cool layers coconut side up on rack.
R%Place first layer, coconut side down and spread on filing (see below).

R% Top with second layer, coconut side up. Swirl White Snowy Frosting
R%around sides and 1 inch around top edge leaving center unfrosted (see
R%below for Snowy White Frosting).

Q%CREAMY NUT FILLING:

Q%Combine 1/2 cup sugar, 2 T. flour, and 1/2 cup cream in heavy saucepan.
Q%Cook until thickened. Add 1/2 cup chopped pecans, 1/4 tsp salt and 1
Q%tsp vanilla. Cool.

Q%SNOWY WHITE FROSTING:

Q%Cream together 1 egg white, 1/4 cup shortening, 1/4 cup butter, 1/2
Q%tsp coconut extract, 1/2 tsp vanilla until blended. Gradually add 2
Q%cups sifted confectioner's sugar, beating until light and fluffy.
