- Rice&Cheddar_Muffins

- 1 cup cooked wild rice
- 1-1/3 cups flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1 Tbls. sugar
- 1/4 cup chopped green onions
- 1/2 cup grated cheddar cheese
- 2 eggs
- 6 Tbls. vegetable oil
- 1 cup milk

- Preheat oven to 425 and grease 12 muffin
- tins. In large bowl, combine flour, rice,
- baking powder, salt, sugar, green onions
- and cheese. Beat eggs with oil and milk.
- Pour egg mixture into rice mixture and
- stir until just blended. Spoon batter
- into muffin tins and bake 15 minutes or
- until golden brown. Makes 12 muffins.
