- Herbed Shrimp

- Cleaned fresh shrimp 10 oz
- Olive oil 3 tbs
- Crushed garlic cloves 2
- Seeded and chopped red chili 1
- Chopped parsley, dill and mint, mixed 1/2 cup
- Lemon juice 2 tbs
- Salt to taste

- Heat the olive oil in
- a heavy frying pan.
- Add the garlic and chili
- to the frying pan when
- the oil is hot. Cook for
- 2 minutes then add the
- shrimp and stir for 2-3
- minutes. Add the herbs
- and lemon juice.
- Season to taste with salt.
- Serve at once or
- at room temperature.
