This is the recipe my grandmother and mother used for both potato salad
and Waldorf salad (the first mixed with mayonnaise, the second with
whipped cream).
Grandma's Salad Dressing
3 eggs beaten until light
2 tablespoons sugar
1/2 teaspoon mustard
1 teaspoon salt
To this add 1/2 cup hot vinegar [apple cider]. Cook in double boiler,
stirring often, until of right thickness. ["Right thickness" is about
the consistency of mayonnaise.]
Your kitchen will smell like vinegar for hours, but it's a wonderful
tangy dressing with just the right "bite".
