Subject: Potatoe recipes
sorry for posting so late to the request what to do
with potatoes.,

Dijon Potato Salad
- ------------------
1 cup mayo
2 tsp Dijon mustard
2 tsp FRESH chopped dill or 1 1/2 dried dill
1 tsp salt (if you use it, not needed)
1/4 tsp black pepper
1 1/2 lb small red potatoes, cokked and quarted
1 cup sliced radishes
1/2 cup chopped green onions
Combine first 5 ingredients. Stir in remaining ingredients.
cover; chill. makes 4 1/2 cups.
microwave:
in 1 1/2 quart casserole combine quarted potatoes and
1/4 cup of water. cover. microwave on high 100% power
stirring once, 8 to 10 minutes or until tender.
drain. continue as above.
Lemon Mustard Turkey cutlets

1/4 cup all-purpose flour 2 tbs capers
1lb shady brook farms turkey cutlet 1 tbs onion
1 1/2 tbls butter 2 tsp dijon mustard
1/2 cup cream 2 tsp lemon juice
2 tbls chopped parsley 1 tsp grated lemon peel
combine flour, salt and pepper on a flat plate. lightly dust
turkey in flour, shaking off excess. heat butter in large, non-stick
skillet over medium heat. add turkey and cook, turning once, and
until cooked through, about 4 minutes. Remove to serving plate;
keep warm. pour cream into skillet and heat over medium-high heat
to boiling, scraping up browned bits on bottom of skillet. add
remaining ingredients and cook until cream is
slightly thickened, about 2 minutes. season with salt and pepper
to taste. spoon sauce over turkey;serve hot.
I uses skim milk and the sause turned out fine. i also use
Lawyer;s lemon pepper. i use is on fish too and it's great.
of course i use marg to cook not butter.
