Someone sent me email a while ago asking for some salad recipes to pack
for lunches but his mail message disappeared from my box, so I hope you
find these here!
Couscous Salad
==============
1.5 c boiling water
1 c couscous
1/3 c olive oil
1/4 c lemon juice
1 tsp Dijon mustard
1/2 tsp curry powder
1/4 tsp salt, pepper
3 green onions, sliced
10 slivered snow peas or 1/2 cup frozen peas run under hot water
- mix couscous and curry powder, cover with boiling water while you eat
breakfast (about 15 mins.)
- Mix in everything else
- Either line a pita pocket with lettuce and fill with salad, or put salad
in a container and remember to take a fork with you.
* the dressing from this salad is also good over leftover rice or other
grains.
Tabbouleh Salad with Chick-peas
===============================
1 c bulgar
1.5 c boiling water
1.5 tsp salt
1 can chick-peas, or 1 c frozen, cooked chick-peas
3 green onions
2 tomatoes, chopped
1 green pepper, diced
1 c chopped fresh parsley (food processed!)
1/4 c chopped fresh mint (optional, I usually don't have this)
1/3 c olive oil
1/4 c lemon juice
1 clove garlic, minced or pressed
1 tsp Dijon mustard
salt & pepper
- cover bulgar with boiling water and salt, soak 20 mins.
- Mix in everything else
- fill lettuce lined pita pockets or container
Left-Over Pasta Salad
=====================
* this is something I make up depending on what's in the fridge so it's
not an accurate recipe!
cooked pasta
soy-milk yogurt (dairy yogurt should work too!)
chili powder
cayenne
mustard
grated carrot, chopped celery, or frozen mixed veggies
anything else in the fridge that looks good! i.e. left-over rice or other
grains or veggies
Mix in enough yogurt to make the pasta creamy, add everything else and
mix and taste until right. Put into a container and remember to take a fork!
