I don't know whether this is close to your Zucchini bread recipe, (I
would definitely like to try yours and compare the two), my mom likes
this one. Also it freezes very well, so if you have a lot of zucchini...
Zucchini Bread
--------------
Beat in a large mixer bowl:
3 eggs
2 1/4 cups sugar
1 cup oil
3 tsp vanilla
In a separate bowl, sift together:
3 cups flour
1 tsp baking soda
1/4 tsp baking powder
3 tsp cinnamon
1 tsp salt
Blend wet and dry ingredients together. Add:
1 cup chopped nuts
2 cups chopped zucchini (raw, unpeeled)
1 cup raisins
Put into 2 greased loaf pans. Bake at 350F for 1 hour.
Freezes for 6 months.
