I don't know if this is the version typically served in SE Asia but it is
how my friend from Southern India makes it.

DOSA (Sunetra)
4 C. rice flour
1 C. urad dal flour
pinch fenugreek
water
ghee
Mix flour with enough warm water to make a semi-thin paste the
consistency of pancake batter. Let sit overnight. Heat oiled frying
pan and add enough batter to cover the bottom, spreading the batter
out. Add small amount of oil around the edges. Cook til browned and
flip. Brown and flip back to original side. Spread a small amount of
ghee on the dosa and fold in half, removing it from the pan.
DOSA CHUTNEY (Sunetra)
1 TBS sesame seeds, roasted
1 TBS roasted peanuts
1 TBS split, roasted chickpeas
1/2 tsp hot pepper
1 clove garlic
2 TBS coriander leaves
3 TBS coconut
1/2 tsp cumin seed
1/2 tsp salt
1/4 tsp tamarind paste
3 TBS yogurt or sour cream
6 TBS water
Grind first 10 ingredients in blender. Mix in yogurt/sour cream and water.
