Here's another good low fat muffin recipe:
Spiced Brown Bread Muffins
2 cups whole wheat flour
2/3 cup all-purpose flour
2/3 cup packed brown sugar
2 tsp. baking soda
1 tsp. cinnamon or pumpkin pie spice
2 cups buttermilk (I use 1% fat buttermilk)
3/4 cup raisins
Preheat oven to 350 F. Grease 6 (4-inch) muffin cups or 12 regular size
ones. In a large bowl, combine flours, sugar, baking soda and spice.
Stir in buttermilk just until flour mixture is moistened. Fold in
raisins. Spoon into muffin cups. Bake 35-40 min. (25-30 min for 12-cup
tin) or until wooden pick inserted in center comes out clean. Remove
from pan.
This recipe is from "The Muffin Cookbook", by Favorite Recipes (one of
those glossy little recipe magazines sold in supermarkets). They just
reissued this one.
