Subject: Easy French Bread
Ingredients:
1 package yeast
1 tsp salt
1 tsp sugar
1 tsp butter
2 cups flour
1 cup + 1 tsp water (warm)
Proceedure:
o Take 1/4 cup of the water, add yeast mix well. Add salt, sugar and
butter and mix till smooth.
o Add remaining water and mix in the flour slowly (dough hooks in a
mixer work well). Mix for 5 minutes (dough should be very elastic).
o Spread flour on a cutting board and knead the dough ball (push out
and fold in half, repeat). You may have to flour your hands several
times to keep the dough from sticking. Knead for 5 to 10 minutes.
o Place dough in a greased bowl and lightly spread some oil or butter
on the dough ball. Cover with a dish cloth and place in a warm, dark
draft free place*. Let rise 90 minutes.
o Remove the dough ball and lightly knead again (about a minute).
Separate in two and place each in a small greased loaf pan. Cover
and let rise 45 minutes.
o Carefully place the two loaf pans into the oven and cook for 40-45
minutes at 350.
*I find the best place to rise bread is the microwave. Heat 2-3 cups of
water in a glass bowl (2 minutes). Open the door to release the steam.
Place your cloth covered bowl or loaf pans in the microwave along with
the water bowl. It is dark, warm, moist and draft free.
