Artichoke Frittata

(It wouldn't be the Intercalary Day Tea without this one...)
For 1 - 8 inch square pan, double for a 9/13 pan.
Preheat oven to 325 degrees
3 - 6 oz jars marinated artichokes, drained and finely chopped
1/2 pound sharp cheddar, grated
1 onion, finely chopped
4 eggs, lightly beaten
6 single salted soda crackers, finely crushed
dash Tabasco
salt and pepper
paprika
Mix ingredients well and smooth evenly into a sprayed pan. Dust with
paprika, bake at 325 for 1 hour. Cut into 1 inch squares and serve
hot or at room temperature. We don't freeze this one, make it the
day before for best results, but it keeps quite well in the
refrigerator. Colene made 2 - 9/13 (quadruple batch) pans and I
barely managed to snitch 2 squares - and got whacked for messing up
the prepared serving tray :-)
