>I am looking for unusual recipes requiring bananas as one of the ingredients.
This is one of my favorites. It's from "Favorite New Orleans Recipes"
by Suzanne Ormond, Mary E. Irvine, and Denyse Cantin (Pelican
Publishing Co., 1979). Enjoy.
Banana Fritters
2 large very ripe bananas, mashed
1 cup (250 ml) sifted flour (I never bother sifting)
2 tsp (10 ml) baking powder
1 large egg
1/4 (60 ml) cup milk
1 tsp (5 ml) sugar
1 tsp (5 ml) vanilla extract
pinch of salt
cooking oil
In mixing bowl, place flour, sugar, baking powder, and salt. Beat egg,
milk, and vanilla until well blended. Add egg mixture to flour mixture and
blend well. Add mashed bananas and blend.
In heavy skillet, place about 1 inch (2.5 cm) oil and bring to 375
degrees F. (190 degrees C). Drop spoonfuls of mixture in hot oil and
fry until golden brown, turning to get even color. Remove from oil and
drain on absorbent paper. Sprinkle fritters with powdered sugar. Serves 6.
