Hello,
I have a recipe for sheet cake which I learned from my mom. We're both
Texans, so maybe this is what you would call "Texas Sheet Cake" :) The
cake is very rich and moist, but doesn't have any nuts (I'm sure you
could improvise if you like). Its recipe and accompanying icing
recipe that we use, follows:
CHOCOLATE SHEET CAKE
2 cups sugar
2 cups flour
1 stick butter (1/2 cup)
1/2 cup shortening
4 tblsp cocoa
1 cup water
1/2 cup buttermilk
1 tsp baking soda
1 tsp cinnamon
2 eggs
1 tsp vanilla
Sift together sugar and flour in a large bowl. In a small sauce pan
combine butter, shortening, cocoa, and water and bring to a rapid
boil. Pour this mixture over the sugar and flour and mix well. Mix
together the buttermilk (if I don't have buttermilk, I use 1/2 cup milk
with 1 tsp lemon juice, which seems to work well), soda, cinnamon,
eggs, and vanilla. Mix this into the other ingredients. Pour into a
greased and floured long pan. Bake approximately 30 minutes at 400
degrees F. When completely cooled, frost with Creamy Cocoa Frosting.
CREAMY COCOA FROSTING
3 cups (1 box) sifted confectioners sugar
1/2 cup cocoa
1/2 cup softened butter
1 tsp vanilla
2 eggs
milk if necessary (usually never necessary!)
Sift together in a large bowl the sugar and cocoa. Make a well in the
center. Add and beat well eggs, butter, and vanilla until smooth. If
necessary, add enough milk for spreading consistency.
