BISCOTTI
2 1/2 cups flour
1 cup sugar
3 eggs, slightly beaten
2 tsp. vanilla
2 tsp. baking powder
1/4 lb. melted butter, cooled a bit (=1 stick)
AND one of the following:
2 tsp. anise extract and 2 tsp. anise seeds
OR
2 tsp. almond extract and 1/2 cup almonds, sliced
OR
2 tsp. lemon extract and grated rind of 1 lemon (approx. 2 Tbsp.)
Mix all ingredients together until just blended. Don't overmix.
Batter should be lumpy. Form into two rectangular mounds on an
ungreased cookie sheet.
Bake at 350 degrees for 20 minutes. They should be cooked through but
just barely golden. Use two spatulas to transfer the mounds to a
cutting board--be careful, they're crumbly. Cut into 3/4" slices.
Place the slices cut side up on the cookie sheet, and broil until
slightly brown, then turn and broil the other side. When broiling,
leave the rack at the same height as it was for baking, and leave the
oven door partially open. They need to broil for only a couple of
minutes--they burn easily. Cool on a wire rack.
