YELLOW CAT SPRINGWATER OKTOBERFEST BEER '91

This recipe is closely modeled after Charlie Papazian's "ZOOM Oktoberfest" in the Fall 1990 issue of Zymurgy. I brewed it on Sept. 29, 1991, and it was ready to drink around Oct. 20. All ingredients came from The Home Brewery in Teaneck, N.J.
INGREDIENTS
3.3 # Northwestern Amber Extract (bag in box)
4 # Yellow Dog Amber Extract
1/2 # klages barley
1/2 # crystal malt
1/2 tsp Irish Moss
1 1/6 oz (8 HBU) Perle hops pellets (60 min)
1/2 oz Saaz hops pellets (20 min)
1/2 oz Hallertau hops pellets (end of boil)
WYeast Munich Liquid Lager Yeast (Strain No. 2308)
1 1/4 cups Edme light dry-malt extract (priming)
PROCEDURE
Toast klages at 10 minutes at 350 degrees on a cookie sheet; cool and
crush with a rolling pin. Place crushed toasted malt and uncrushed crystal
in a grain bag, place in five gallons cold water. Raise to 150 F and steep at
that temperature for 30 minutes. Remove grain bag and discard. Bring to the
boil and add extracts and Perle hops. Boil 40 minutes. Add Irish Moss and
Saaz hops. Boil 20 additional minutes. Turn off heat, and add Hallertauer
hops. Steep for two minutes, then force wort chilling and pitch WYeast at
70 degrees F or below.
Fermented at 55-65 F. During this period, I noticed rather foul odors
(sulfury) coming off, suggesting that the Munich Lager yeast wasn't happy at
this temperature. Racked to secondary after six days, noting a very unusual
aroma that reminded me of a dirty ashtray with cigars in it. At this point,
I was not a happy camper. However, after five more days in secondary, the
finished product smelled normal, and the yeast effects don't seem to have
hurt the finished beer.
I'm not sure that it's entirely in style for an Oktoberfest. It's not
as deliciously malty as I had hoped, and the combination of hoppiness and
warm-lager "tang" aren't in exact character. Still, I'm pleased, and after
conditioning (which seems to take a little longer with DME for priming in
lieu of corn sugar), I haven't had any problem drinking it!
