  1.                          PUMPKIN MUFFINS

  4. 6 T. butter
  5. 3/4 c. + 2 T. sugar
  6. 1 c. canned pumpkin
  7. 2 eggs
  8. 2 c. flour
  9. 3-1/4 t. baking powder
  10.  
  11. 3/4 t. nutmeg
  12. 3/4 t. salt
  13. 2 t. cinnamon, divided
  14. 1 c. milk
  15. 1 t. lemon extractCream butter with 3/4 c. sugar.  Add pumpkin and eggs, one
  16. at a time.  Add dry ingredients (reserving 1-1/2 t. cinnamon)
  17. alternately with milk.  Add extract.  Spoon batter into muffin
  18. cups.  Sprinkle with remaining sugar and cinnamon.  Bake at 400
  19. degrees for 20 to 25 minutes.  Makes 12 muffins.
