Nicolas Appert was the first person to sterilise food and preserve it in airtight containers. By heating the food first, he killed many of the bacteria that would otherwise have rotted it within days. He opened the first food-preserving factory in 1804, using jars rather than the metal cans which are common today. His invention led to him winning a prize from Napoleon in 1809.
