ROAST BEEF
----------
5 lb beef roast, either cross-rib or sirloin tip
3 t salt
1/4 t pepper
3 cloves garlic, quartered
1 t oregano
1 t savory
1 onion, quatered
Sprinkle and rub roast with salt, pepper, oregano, and
savory. Make slits in the meat and insert garlic. Place
roast in a shallow roasting pan. Arrange onion around
the roast. Roast at 350 F for 2 1/2 hours. Remove meat
from pan.
PASTA

3 cups boiling water
Juice of 1 lemon
1 lb pasta, cooked
1/2 cup Parmesan, Romano or Kasseri cheese, grated
Add boiling water and lemon juice to roasting pan for
above ROAST BEEF. Stir to make gravy. Add cooked pasta.
Toss. Sprikle with cheese. Bake 10 minutes at 375 F.
Serve pasta hot with slices of ROAST BEEF.
