Allow 1/2 lb lamb or beef per person.
Cut meat into cubes about 1" thick.
marinade:
1/4 cup olive oil
1 cup wine
2 garlic cloves, crushed
1/8 t pepper, freshly ground
1 t salt
1 bay leaf
1/2 t oregano
1/4 t rosemary (optional)
juice of 1 lemon
lemons, sliced in quaters.
Combine olive oil, wine, garlic, salt, pepper, oregano,
rosemary, bayleaf, and lemon juice. Marinate meat for two
to three hours. Turn at intervals so all sides of the meat
come in contact with the marinade.
Thread the meat closely on 8" cane skewers. If broiling,
place about 6" from heat for about 10 minutes. Turn
frequently. If grilling or barbecuing, cook over hot coals.
Turn frequently and baste with marinade.
Serve with lemon wedges and bread.
