ZUCCHINI PINEAPPLE BREAD
3 eggs 1 t. salt
1 c. oil 1/2 t. baking powder
2 c. sugar 1-1/2 t. cinnamon
2 t. vanilla 3/4 t. nutmeg
2 c. grated zucchini 1 c. chopped walnuts
1 8 oz. can crushed pineapple 1 c. raisins or currants
2 t. baking soda 3 c. flour
Mix in order given. Bake in 2 floured 9 x 5 loaf pans at
350 degrees for 1 hours. Cool 10 minutes in pan and then on
rack.
