THAI CHICKEN
1 med. chicken in pieces 1-1/2 t. chili paste
3/4 c. chunky peanut butter 1 t. honey
1/2 t. sesame oil 3-4 scallions, chopped
1 t. minced fresh ginger 1/8 c. soy oil
1/8 c. warm water
Mix all ingredients except chicken to make sauce. Alternate
adding soy oil and water to finish. Brown chicken 10 minutes
each side at 400 degrees. Coat with sauce and make at 350
degrees for 20 minutes.
