RABBIT POT ROAST

I%1/2, lb, carrots, sliced
I%1, lb, potatoes, quartered
I%1, oz, onion soup mix
I%2 1/2, c, water, boiling

R% Joint the rabbit and wash well. Blanch the rabbit by putting
R%it into a large saucepan, covering it with water, and bringing it
R%to a boil.
R% Remove the rabbit from the saucepan and place it into a 4
R%quart baking dish.
R% Put the raw carrots and potatoes in with the rabbit.
R% Mix the soup mix with the 2 1/2 cups of boiling water and
R%pour over the rabbit and vegetables.
R% Cook covered in a 350 degree oven for 2 hours.
