I%3, oz, raspberry gelatin, (1 small package)
I%1, cup, water, boiling
I%1, cup, applesauce
I%2, T, sugar
I%1, tsp, lemon rind, grated
I%1, T, lemon juice
I%2/3, cup, walnuts, chopped
I%3/4, cup, marshmallows, (tiny kind)
I%1/2, cup, whipped topping

R% Dissolve the gelatin in the boiling water. Add the applesauce,
R%sugar, lemon peel, and lemon juice. Chill over ice water until slightly
R%thickened.
R% Fold in the walnuts and the marshmallows.
R% Pour into a one quart mold and chill until firm.
R% Unmold and serve with whipped topping.

U%To unmold the gelatin, place the mold inside a bowl of hot water
U%for about 30 seconds (this should be long enough, but if it isn't
U%put it back in and try again). Remove the mold from the hot water.
U%Place a plate over the top of the mold and invert. Give it a shake
U%or two. The gelatin should pop out of the mold and be on the plate.
U% I have found that gelatin molds seem to have a mind of their
U%own--once they have the gelatin in they like to keep it there!
U%Don't be discouraged if you have to make several tries.
