  7. Feta cheese    7 oz
  8. Olive oil         1/4 cup
  9. Lemon juice   2 tbs
  10. Black cumin   1/2 tsp
  11. Lemon zest    1 tsp
  12. Freshly ground pepper
  13.     to taste
  14. Gaeta olives   1/2 cup
  15.      or other salt cured black olives

  17. Dice the cheese into 1/2 x 1/2 x 1/2 inch cubes. Combine the oil, lemon juice, cumin, lemon zest and freshly ground pepper in a bowl. Mix in the cheese and olives and set aside for 1 hour before serving.
