- Hi Art, Actually, I am rather confused about it myself. When you cook the
- eggs or any other kind of protein, you denature it. In other words, protein
- consists of hundreds of amino acids bonded together. These strands crinkle up
- into curls due to the binding of the aminos. This crinkling effect or form of
- the protein will dictate the protein's biological role that it is to carry out.
- So the shape of the protein will ultimately dictate the whether or not that
- protein will be used for structural purposes or enzyme functions etc.
- When you heat a protein up to a certain degree, you break the bonds that keep
- the protein crinkled up resulting in a straightened out form. This flat form
- loses its biological capability thus rendering the protein useless.
- However, if you are eating the protein for the amino acid content, it shouldn't
- matter whether or not the protein is denatured. We cook steaks and still find
- meat protein to be beneficial, so I can't see what harm would be caused by
- cooking egg whites.
- When I was training for my competition, I ate a dozen egg whites per day
- (cooked).
