The problem is that HD SC setup is a lousy utility. It only works if the disk has Apple Boot Blocks. Of course, any SCSI drive should work in the Mac, but you'll need a special utility to do the low-level format and install the boot blocks. I've used StorWare (1-800-422-2115 or (714) 498-7945) to format several disks meant for SUN workstations in Macs and they all work well (although a Maxtor 207 needs to be set to SCSI ID 6, strange but true).
My advise is to buy ANY SCSI drive and buy StorWare. I've found that drives that are set up for Macs are more expensive (big surprise, a Mac product that's expensive!). Decent drives come from Quantum, Conner, Maxtor, Fujitsu, and a few others. For guidance, look in the back of a Mac Magazine at the drives they sell.
