- Here's a good non-fat lunch that I enjoy. I call it the "Spa Burrito"
- because I stole the idea from a restaurant that bills itself as "Spa Cuisine".

- Mix and heat the following:

- You can just mix 'em up and stick 'em in the micro for a couple of minutes.

- 1 can rinsed,drained black beans
- 1/2 onion, chopped
- handful fresh cilantro, chopped
- 2-4 oz. diced green chilies (canned is fine)
- 1 cup of cooked brown rice, or other grain.

- Other Ingredients:

- Fresh salsa
- Non-fat sour cream
- Sprinkling of cheese (optional) (a little parmesean is tasty, or some
- non-fat cheese)
- Burrito sized flour tortillas
- Shredded lettuce (optional)

- Fill the tortilla with the heated ingredients and top with fresh salsa,
- non-fat sour cream and cheese.

- If you want to take this to work, put the salsa and sour cream in
- little containers and add it in later. Otherwise the burrito will
- get soggy.

- This makes a wonderfully filling meal. I'd guess about 3-4 grams
- of fat in the cheese and tortilla.
