This is one of my favorites for something fast that feeds a bunch of people.
SuperNachos
1 lb. ground meat or vegetarian ground meat substitue
2 cans refried beans (Rosita's Vegetarian Refried Beans are great!)
1/2 cup picante sauce (Pace medium or hot for best effect)
1.5 lbs. Longhorn cheddar cheese
2 bags black or white corn tortilla chips
Preheat oven to 350 degrees. Brown the meat, then mix in the picante
sauce. In a square cake or casserole dish, spread the beans with a
spatula until they cover the bottom of the pan from 1/4" to 3/4" deep.
Add the meat mixture on top of the beans. Grate the cheese, sprinkle on
top. Bake for 20-30 minutes, until the cheese is very bubbly.
Use the chips to scoop it out!
Notes: The vegetarian version of this is great, and you don't have the
grease that bubbles out of the flesh. If you like things a bit more
spicy, add a handful of diced jalapenos below the cheese. This freezes well.
