Sour Cabbage

Boil half a head of cabbage, coarsely chopped. Chop an onion, saute in
2-3 T. bacon fat. Add 3 T. flour. Let the flour brown. Add 1 c. cold
water, and the cooked drained cabbage. Add salt and pepper to taste,
and 2-3 T. vinegar. Heat through.
Cabbage Casserole

Chop one head of cabbage coarsely. Boil in salted water 8-10 min.
Drain. Melt 5 T. butter. Add 3 T. flour and cook briefly. Slowly add
1 1/2 c. half and half and stir till thick. Add 1/2 tsp. salt, 1/8
tsp. white pepper, 1/8 tsp. cayenne and 1/8 tsp. nutmeg. Pour over
cabbage; toss well. Pour into 1 1/2 qt. buttered casserole. Dot with
butter. Mix 1/2 c. dry bread crumbs and 1/4 c. parmesan. Sprinkle
over casserole. Bake at 350 deg F for 20 min.
Spaghetti Cabbage Fry

Chop one head of cabbage finely. Saute till nearly done in 1/2 c.
butter. Stir in 1 c. finely chopped onion and 1 or more cloves of
minced garlic. Cook till onion is tender. Add salt and pepper to
taste. Serve on hot cooked, buttered spaghetti.
Cabbage Au Gratin Soup

Saute 2 c. shredded cabbage, 1/2 c. chopped onion in 3 T. butter till
tender. Add 3 T. flour, 1/2 tsp. caraway, 1/2 tsp. salt, 1/4 tsp.
pepper, 1/4 tsp. paprika. Remove from heat and add 3 c. milk. Bring
to boil over medium, stirring constantly. Boil 1 min. Remove from
heat. Stir in 3/4 c. shredded cheddar till melted.
Sour Cream Cabbage

Saute 8 c. shredded cabbage and a small onion, finely chopped in 2 T.
bacon fat till tender. Stir in 1 tsp. salt, 1 tsp. paprika, and 1/2
sour cream. Heat through.
Most amounts and spices can be varied.
