  7. I heat up a frying pan, put in some olive oil and saute the hind legs.
  8. Then, reduce the heat, deglaze the pan with some sherry, add some
  9. shallots or green onions, reduce while adding some sliced carrots.
  10. Thicken w/ a bit of flour and serve over wild rice or pasta.  A pinch
  11. of sage is nice after the thickening is complete, too.  Salt and pepper
  12. to taste.

  16. PS:  Same recipe for chicken, rabbit, etc.  Although I like sour and
  17.      sour rabbit better (sour vinegar, sour cream gravy).
