I guarantee this recipe! My dad is a real finicky eater and he adores it;
it's become a holiday tradition. AND it's really easy to make.
Pineapple Casserole
2 large cans chunk (or tidbit) pineapple
shredded cheddar cheese -- i prefer xtra sharp
1 "sleeve" ritz crackers
1 stick butter or margarine
1 cup sugar -- personally i use about 3/4
2 T. flour
Drain the pineapple reserving 1 cup of liquid. Spread pineapple in
bottom of 9x13 GLASS baking dish. Mix sugar and flour into reserved
liquid and pour over pineapple -- hint: you should use enough liquid
to cover the pineapple well, but not drown it. Cover the pineapple
with shredded cheddar. Top with crushed Ritz crackers. Melt stick of
butter and spoon over crackers. Bake for 30 minutes at 350 degrees.
Serve warm.
PS. This is a side dish NOT a dessert. It also works well with ham.
