Subject: Sri Lankan Recipes - Sambal
Here is a Sri Lankan Recipe for your collection :
Sambal (fried)
Ingredients
+ 1/4lb Dessicated Coconut
+ 1/4pt of Milk
+ 1 Large Onion
+ 1 tsp of salt
+ 1 Tbsp of sugar
+ 1-2 Tbsp of fresh red Chile powder
+ Oil or Margarine for frying.
1 Mix the dessicated coconut with milk in a mixing bowl
and leave the mixture (about two hours) until all the
milk is absorbed. (Well, in Sri Lanka we use fresh
(scraped) Coconut, this is a way of making the equiv.
If you have a coconut scraper you can use fresh coconut
instead)
2 Slice the Onion and add one half of this to the mix-
ture.
3 Add salt, sugar and red Chile powder and mix it
thoroughly. Leave the mixture for 5 minutes.
4 Fry the onions till brown, and add the mixture and cook
for 2-3 minutes.

Tbsp - Table spoon
