Subject: LACTO: Mom's Old-Fashioned Fudge
Mom's Old-Fashion Fudge
I just called my mother and she gave me her recipe. As I remember,
this is a rich fudge but not as airy as one with marshmallows (but
I suppose they could just be added at the end.)
In a heavy saucepan combine:
2 heaping cups white sugar (I'm going to guess it at 2 cups + 1 T)
2 tablespoons cocoa
2 tablespoons light corn syrup
dash of salt
1 cup heavy cream
Bring the above ingredients to boil. Cook until they reach soft ball
stage (234 to 240 F) Remove from heat and add the following:
1 cup nut pieces
1 tablespoon butter or margarine
1 teaspoon vanilla
Stir to combine then pour out on a buttered pan and let cool until
hardened.
Enjoy,
Lorri (SPELL@UKANVAX)
