Subject: OVO-LACTO: Dark Chocolate Cheesecake
I just got the "The Joy Of Cheesecake" book by Dana Bovbjerg & Jeremy
Iggers (from Barron's), and I am sitting next a slice of the Heavy NY
Style Cheesecake (I added in apples, and topped it with crumbs) that I
made with the help of the book. So, I would be happy to help!
Dark Chocolate Cheesecake
Recommendations:
Basic Crumb Crust made from vanilla wafers
9 inch springform pan
Ingredients:
5 Squares (5 ounces) Semisweet Chocolate
1.5 lbs Cream Cheese
3/4 Cup Granulated Sugar
3 Large Eggs
1 Teaspoon Vanilla Extract
1 Cup Sour Cream
Steps:
1- Preheat oven to 275 degrees
2- Melt chocolate in the top of a double boiler
3- Meanwhile, in a large mixing bowl, beat the cream cheese with the
sugar until the mixture is smooth and light.
4- Beat in the eggs and the vanilla
5- Stir the melted chocolate and the sour cream into the cream cheese
mixture and blend well.
6- Pour the mixture into the prepared crust and bake for 1 hour and 15
minutes. Turn off the heat and allow the cake to cool in the oven.
Chill.
I have never tried this recipe, so I don't know how good it is. Good luck!
