Brown Monkey
Here's a fun extract recipe for banana lovers. The inspiration hit one night
while drinking raspberry ale. "Gee? I wonder what bananas would . . ."
After a little experimenting, I was able to come up with quite a tasty brew.
It has become popular among my friends, and runs out all too quickly.
1/3 Pound Crystal Malt
1 Pound Honey
6 Pounds Light Dry Malt Extract
6 Pounds Bananas.
2 oz Hallertauer (60 minutes)
1/2 oz Tettanger (5 minutes)
Your favorite jungle ale yeast.
Add crystal malt as you usually would. Boil honey, malt extract, and Hallertauer
hops for 60 minutes. Add Tettanger in final 5 minutes of boil. Cut up bananas
(like coins) and add. Turn off heat, and allow bananas to steep for 15 minutes.
Without sparging, pour wort into plastic primary (bananas and all). Add water
to top to five gallons. When fermentation slows, rack into seondary fermenter.
Be careful not to clog racking tube! Bottle when fermentation is complete.
Allow at least four to six weeks to mellow.
