Mas Smada Lager
Using Yellow Dog Extract
For 5 gallons:
6 pounds of YD amber extract
4 ozs. of Cara-pils malt
3 ozs. of Crystal malt
1.5 ozs. of Tettnanger hops pellets
1.0 ozs. of Hallertau hops pellets
1/4 tsp. Irish moss
20 ounce yeast starter from Wyeast Bohemian (#2124)
Specialty grains cracked and added to 6 gallons of cold water
and brought to 170 F. Remove the grains.
Add the YD extract (you'll have 2 pounds left over, folks, but you could
have made 10 gallons with 3 cans!) and bring to a strong boil.
Add all the hops and boil for 1 hour. Add Irish moss during last 10
minutes of the boil. Chill etc. and add yeast starter. Wait for "big"
krausen to form before throwing the primary into the cooler.
Primary for 3 weeks at 47 F.
Secondary for 6 weeks at 34 F.
Condition with 3/4 cups of corn sugar.
O.G. 1.046
F.G. 1.010 or there abouts.
This brew is still being experimented with. It might be worth cutting
on the extract or even using a plain pale like Laglanders Dry while
increasing the Crystal and Cara-pils and adding a Chocolate component.
At this point, I just don't know. Be assured that the brew, as given
here, is still a cousin to S.A.....How close remains to be seen.
