Title: Fightin' Gator Dark Ales
Keywords: RECIPE ALE GATOR BROWN IPA
Recipes for a Brown Ale and an IPA variation.
- FIGHTIN' GATOR NEW DEHLI ALE
Ingredients (for 5 gallons):
6.6 lbs. Munton & Fison Amber Extract (unhopped)
1 lb. Crystal Malt
4 cups Laglaander Light Dry Malt Extract
1/3 oz. Burton Water Salts
1 3/4 oz. Chinook Hop Pellets
1/2 oz. Fuggles Hop Pellets
Yeast (See Notes)
3/4 cup corn sugar (to prime)
Procedure:
- Pre-boil and chill all water to be used in the brewing process
- Crack the grain and put in pot with approximately 1 gallon of
the pre-boiled water. Bring heat slowly to boil. Remove the
pot from heat and steep for 45 minutes.
- Sparge the water over the grain between the grain pot and the
brewpot to remove all flavor, etc. Discard the used grain.
- Bring the brewpot to a boil and add the Extract, Dry Extract,
Water Salts and Chinook hops. Boil for 60 minutes
- Add the finishing Fuggles hops for 10 minutes
- Pitch yeast
- BSG: 1.052 ESG: 1.016
Notes:
Again, this was an early effort and I used the dreaded Red Star
Ale yeast. Since I am not extremely polished in the method of
determining the style of the final product, this could be a
bitter or even a brown ale, although an IPA was what I was
attempting at the time. It has taken me some time to realize
that using Amber Extracts (with or without grains) does not
necessarily produce a final product that is amber in color. In
more recent batches I have used a combination of light and amber
malts and have achieved a color closer to what I am attempting.

- FIGHTIN' GATOR TWITCHIN' SQUIRREL BROWN ALE
Ingredients (for 5 gallons):
8 lbs. Yellow Dog Amber Extract
4 cups Laglaander Light Dry Extract
1/2 lb. Crystal Malt
1/3 oz. Burton Water Salts
1 1/2 oz. Kent Golding Hop Pellets
1/2 oz. Fuggles Hop Pellets
1/2 oz. Cascade Hop Pellets
1 1/2 tsp. Irish Moss
Whitbread Ale Yeast
3/4 cup corn sugar (to prime)
Procedure:
- Pre-boil all water to be used in brewing process
- Crack the grain and put in pot with approximately 1 gallon of
the pre-boiled water. Bring temperature to 140 and hold for
25 mins. Remove grain pot from heat and steep for 30 mins.
- Sparge the water over the grain between the grain pot and the
brewpot to remove all of the flavor, etc. from the grains.
Discard the used grain.
- Bring the brewpot to a boil and add the Amber Extract, Dry
Extract, Water Salts and Kent Golding hops. Boil 60 minutes.
- Add Irish Moss for last 15 minutes of boil.
- Add finishing Fuggles hops for last 10 minutes of boil.
- Add finishing Cascade Hops for last 5 minutes of boil.
- Pitch yeast
- BSG: 1.066 ESG: 1.020
Notes:
I was still attempting to get an amber ale, but was told by my
brewclub that this was a pretty good example of a Brown Ale,
so...it became a Brown Ale. (Just what I was going for all
along!)
Most of my dark beers are overhopped for the style (but what do I
know from style?), but they do suit my taste. However, I have
made a solemn vow that I will attempt to tone down the bittering
hops in some of my future recipes. (See "Fightin' Gator Bulldog
Victory Ale" for an example of a later, lesser-hopped brew)
