Title: Sour Cream Broiled Tomatoes
Categories: Vegetables, Easy
Servings: 4
4 Tomatoes; large firm ripe
1/2 c Sour cream
1/2 c Mayonnaise
1/2 ts Salt
1/8 ts Pepper
1 ts Parsley
1/2 ts Basil
2 ts Flour
1 ts Sugar, granulated
Cut tomatoes in half crosswise. Squeeze gently to remove juice and seeds.
Broil 6 inches from heat for 5 minutes. Mix remaining ingredients together.
Spread over tomatoes. Broil about 2 minutes more until tinged a golden
color. Serves: 8

Title: Broccoli and Corn Bake

Servings: 1
2 c Cream style canned corn
1 1/4 c Broccoli, cooked and chopped
1 Egg
1/2 c Coarse crumbs
1/4 c Melted butter or margarine
Mix together in greased 1.5 quart casserole. Top with a mixture of 2
tablespoon cracker crumbs and melted butter or margarine. Bake at 350
degrees for 40 minutes.

Title: Celery and Cabbage Bake

Servings: 4
4 c Cabbage; coarsely chopped
1 c Cheddar; grated
3 c Celery; sliced
1/2 c Beer
1 ts Caraway
2 c Milk
2 ts Butter
1/2 c Flour
Bring water to boil in large pot. Add cabbage, celery, salt & caraway.
Boil 5 min, drain well. Sauce: melt butter, add flour & cook, stirring 1
min. Slowly add milk in stream, stirring continuosly till sauce is
smooth & thick. Add beer & continue stirring till foam disappears. Cook
till heated through. Add cheddar, stir till melted. Season sauce with
salt & pepper. Transfer to buttered 2 qt casserole and pour sauce over.
Heat at 350F for 30 min.
VARIATION: Can add chunks of cooked ham or corned beef to vegetables.

Title: Celery with Pine Nuts

1 Celery; large bunch
1 Onion; small chopped
1/2 c Pinenuts; toasted
4 ts Butter
Salt & pepper
1 ts Parsley; chopped italian
Wash celery, cut into diagonal pieces, 1" long. Melt butter in saucepan
and add onions and celery. Cover and cook, shaking pan till celery is
tender-crsip, about 15 minutes. Remove lid, stir in salt & pinenuts, serve
immediately.

Title: Garlicky Mashed Potatoes

6 Potatoes
8 Cl Garlic
1/2 ts Salt
2 tb Butter
1/4 c Milk
White pepper
Calories per serving: 224 Fat grams per serving: Approx. Cook Time:
:30 Peel Potatoes and cut into quarters. Place in medium saucepan with
garlic and salt; add enough cold water to cover. Bring to boil over high
heat. Reduce heat to medium; simmer, covered 25 to 30 minutes or until
potatoes are tender. Drain well; return saucepan to turned-off burner to
dry potatoes. Mash roughly. With electric hand mixer or wooden spoon,
beat in butter and enough milk to make a creamy consistency. Season with
pepper to taste. Serve at once.

Title: Green Tomatoes, Fried

1 lb Tomatoes, green
1 Pepper, red for contrast
1/2 c Cream
Butter or oil for frying
Salt and pepper to taste
Core and cut green tomatoes. The skin may be a problem depending upon the
age of the tomatoes;if necessary, peel the skins. Melt butter or
shortening;fry the tomatoes until they become translucient but not mushy.
Season and add the pepper for colour; add the cream being careful that it
does not curdle. Enjoy

Title: Zippy Cauliflower

Servings: 6
3 c Cauliflower
1 tb All purpose flour
1/4 ts Salt
3/4 c Skim milk
2 tb Chopped green chilies
1/2 ts Low fat margarine
1/8 ts Red (cayenne) pepper
1/8 ts Pepper
1/2 c Shredded low fat cheddar ch
1/4 c Fresh bread crumbs
Preheat oven to 350F. Steam cauliflower just until tender; drain. Melt
margarine in a medium size saucepan over medium heat. In a jar with a lid
combine flour, red pepper, salt, pepper, and milk; shake until blended.
Slowly add to margarine in saucepan, stirring constantly until smooth. Add
cheese and continue stirring until smooth and slightly thickened. Stir in
chilies. Arrange cauliflower in a 2 quart baking dish; pour sauce over
cauliflower, then sprinkle with bread crumbs. Bake 10 to 15 min or until
bubbling. Cal: 73 Fat 2g.

Title: Fried Batilgian

1/4 c Vegetable oil
1/4 c Olive oil
2 ea Eggs, beaten
1 lg Eggplant, cut into 1/2 inch

Salt to taste
Heat oils in a heavy skillet on high heat till the oil sizzles, then lower
to medium. Dip slices of eggplant into the beaten egg & fry for about 4
minutes on each side, till browned. The coating will be crisp & the
eggplant tender. Reduce heat if necessary. Drain on paper towels &
sprinkle with salt. Serve immediately.
