H A R V E S T H O M E

We live in the Bread Belt of the
midwest. In the late 1800's, a new
variety of wheat was brought to
America by Russians -- winter wheat.
The seed is sown in the fall, weathers
the cold months, then is cut between
May and August, depending on the
latitude of the farm.
The first consumer product made
with this hard wheat was the "soda
cracker," based (I believe) on Jewish
mazta. Crackers have a long shelf life
-- perfect for national distribution.
Then came the proverbial "sliced
bread," from bleached flour for mass
production. Today, some "wheat bread"
is really white bread with caramel
coloring.
