I think you made a mistaken assumption.
Based upon the stament "because of all the time he spent flying simulators"
make it sound as if he enjoyed the sim more, not that he feared the "devil may
care".
Given that the excitment would be just a fulfilling I would choose the
less dangerous option every time. No need to bungee jump when I can
pop on the googles and get the same experiance.
However there are a lot of things that just can't be done "completely"
in VR, like get enough exercise to keep weight off. ;^)
