At Alice Waters' Chez Panisse restaurant in Berkeley they
aren't kidding when they say, "Eat your greens." Waters runs
what could be the world's most environmentally aware eatery. Her
chickens are nearly 100% organic and contain no antibiotics and
no added hormones. The fish is carefully chosen from all over
the country from areas thought to be the least polluted. Scraps
from the table go to a compost heap that nourishes new crops.
Even the olives are picked by hand and then cured at the
restaurant. And it isn't just Earth Day observers who are
impressed. At this year's James Beard Awards, the eaters'
Oscars, Waters walked off with both restaurant of the year and
chef of the year honors, beating out competition from Lutece and
Le Cirque. Says Waters with typical earnestness: "Food is not
just about a party. It's about a quality of life."
