An apple pudding from the Mid West.
Graham Cracker Pudding
6 apples, medium 3 T butter
12 graham crackers 3 T lemon juice
1/2 c brown sugar or maple syrup 1 c water
1 c walnuts, chopped 1/4 t nutmeg
Crush graham crackers to make fine crumbs. Mix crumbs with brown sugar and
chopped walnuts; set aside.
Peel, core and slice apples. Arrange in buttered 8-inch baking dish in
alternate layers with crumb mixture. Dot top with butter and pour lemon juice
and water over all. Sprinkle with nutmeg. Cover and bake in slow oven at 350
degrees for about 30 minutes, until apples are cooked to a jelly.
Serve hot or cold with cream or whipped cream.

Spicy Fruit Muffins
2 c flour 2/3 c brown sugar or maple syrup
3 t baking powder 1/2 c chopped walnuts
1 tsp salt 2 eggs, beaten
1/8 tsp cloves 2/3 c apple juice
1/4 tsp nutmeg 1/4 c butter, melted
1 cup shredded, pared apple 1 c bran flakes
Sift together flour, baking powder, salt and spices. Stir in apple, brown
sugar and nuts. In a separate bowl, combine eggs, juice and butter. Stir into
apple mixture just until blended. Fold in bran flakes. Pour into oiled muffin
pans, filling each cup about 2/3 full. Bake at 400 degrees for 15-20 minutes.
Makes 12 muffins

Grandma Dena's Very Chocolate Pudding
2 c milk 1/2 t salt
2 squares unsweetened chocolate 2 eggs, separated
1 1/2 T cornstarch 1/4 c sugar
1/4 c sugar 1 t vanilla extract
Scald milk and chocolate in the top of a double boiler, stirring frequently to
make it smooth. In a bowl, mix together cornstarch, sugar and salt. Slowly
add chocolate mixture while stirring constantly. Return mixture to double
boiler. Cook while continuing to stir until mixture thickens, then cover and
cook 25 minutes stirring occasionally to keep smooth.
Beat egg yolks with sugar. Pour chocolate mixture over them while beating
constantly. Return to double boiler and cook 1 minute more. Let cool. Add
vanilla and beat well. Beat egg whites until stiff and fold into chocolate
mixture. Turn into individual bowls and chill thoroughly before serving.
For Chocolate Pie, pour into 8-inch baked pie shell and chill.

Custard Pie
2 eggs 1/2 t vanilla
1/3 c sugar 1 pie shell, unbaked
1/2 t salt 1/4 t cinnamon
2 c whole milk, scalded
Beat eggs slightly. Add sugar and salt. Slowly stir in hot scalded milk. Add
vanilla. Strain mixture into unbaked 8-inch pastry shell. Sprinkle top with
cinnamon.
Bake on lower shelf of hot (425 degree) oven for 25-30 minutes, or until
custard is firm and knife blade comes out clean. Let cool at least 15 minutes
before cutting. Serve warm or cold.

This is a very moist, rich cake that you can serve frosted or unfrosted. It's
great for packed lunches because it holds together so well.
Chocolate Pudding Cake
2 oz unsweetened chocolate, melted 1/2 t salt
1 c sugar 1/2 t vanilla
1 1/4 c flour 1 1/4 c water
1/4 c salad oil 1 pkg (4 oz) instant chocolate
3/4 t baking soda pudding mix
In a medium bowl, beat together chocolate, sugar, flour, oil, baking soda,
salt, vanilla and water. Beat 2 minutes. Add instant pudding mix and beat
only until well blended. Pour into lightly oiled 7 x 12-inch baking dish, and
bake at 350 degrees for about 30-35 minutes. Let cool and frost, if desired.
Serves 8

An easy, basic chocolate frosting.
Chocolate Buttercream Frosting
1 square (1 oz) unsweetened chocolate, 2 c powdered sugar, sifted
melted and cooled 3 T milk (as needed)
4 T butter, softened 1/2 t vanilla extract
Beat chocolate and butter together until smooth. Continue beating and add 1 c
sugar followed by 1 T milk, followed by more sugar and milk, until all sugar is
blended in. Use only enough milk to make it good consistency for spreading.
Beat in vanilla. Spread on cooled cake.
Makes about 1 1/2 cups frosting

Grandma's house always meant the smell of wonderful things baking in the oven.
This was one of my favorites.
Grandma's Spice Cake
3/4 c butter or shortening 1/4 t allspice
1 c brown sugar 1/4 t cinnamon
1 egg 2 c flour
1/2 c raisins 1 t baking soda
1/4 t salt 1 c sour milk
1/4 t cloves 2 t baking powder
1/4 t nutmeg
Cream together butter, brown sugar and egg until light and fluffy. Stir in
raisins, salt and spices. Add half the flour. Blend in baking soda and milk.
Stir in remaining flour and baking powder.
Pour batter into buttered 8-inch round layer pans or 7 x 12-inch baking dish.
Bake in a moderate oven at 375 degrees for 25 minutes or until top springs back
when touched. May be served plain or frosted; warm or cooled.

A great way to start your day.
Prune Coffee Cake
1 c prunes 1/2 c milk
2 c flour 1/3 c butter or shortening
3/4 c sugar 1 t cinnamon
3 t baking powder 2 T brown sugar
1/2 t salt 3 T butter, melted
1 egg
Soak prunes in just enough warm water to cover; set aside.
Mix and sift all dry ingredients. In a separate bowl, beat egg until light and
fluffy. Stir in milk and melted butter. Gradually add this liquid to flour
mixture and combine thoroughly. Turn into lightly oiled 8-inch square baking
dish.
Cut soaked prunes into pieces and press down into dough. Combine cinnamon,
brown sugar and melted butter. Spread over prunes.
Bake at 350 degrees for 30-40 minutes.
Serves 6
