††The earliest ovens consisted of pits lined with stone. When this enclosed area was heated it could be used for roasting meat. However, cooking was largely carried out over open fires until the middle of the 19th century, although iron stoves came into use during the 17th century. During the 19th century the iron cooking range dominated the kitchen. Some models contained more than one oven, and much heat was produced as a useful by-product.
