Christmas Ale
Ingredients in 5 gallon batch:
6 lbs 6 oz (2 Cans) Multon & Fison Amber Malt
1 lb. Poplar Honey
1/2 oz Cluster American Hop Pellets (boiling)
1 1/2 oz Cascade Hops (boiling)
1/2 lb. German Light Crystal Malt
1/8 lb Black Patent Malt
1/2 oz Saaz Hops
2 tsp Burton Water Salts
1 tsp Irish Moss
1 pkg Whitbread (English) Ale yeast
2 tsp Ground Nutmeg
1 tsp Ground Cinnamon
1 tsp Ground Ginger
1/2 Cup Corn Sugar (for bottling)
Put grains in 4 gallons of cold water. Bring slowly to 190F then strain out
the grains (put grains in nylon bag to make it easier). Bring liquid to a
boil. Add malt syrup, honey, water salts and 1 gallon of water and bring
to a boil. Add boiling hops and boil for 55 minutes. Add Irish Moss for
last 5 minutes of boil. Add Saaz hops for final 2 minutes. Chill wort to
75F. Strain cooled wort into the primary and aerate as you do so. Top off
wort with water to bring level to 5 gallons. Add spices to
the wort.
S.G. should be about 1.058. Pitch yeast and cover with airlock.
Brown Dog Brown Ale
Ingredients in 5 gallon batch:
8 lbs (2 Cans) THE HOME BREWERY Yellow Dog Malt Extract
1 Cup Crystal Malt (whole)
3/4 oz Bullion Hop Pellets (boiling)
3/4 oz Kent Goldings Hop Pellets (boiling)
3/4 oz Willamette Hop Pellets
1/4 Cup Chocolate Malt (crushed)
2 tsp Burton Water Salts
3 oz Malto-Dextrin
1/2 tsp Irish Moss
1 pkg German Ale Liquid Wyeast
1/2 cup Corn Sugar (bottling)
Put grains in 6 gallons of cold water. Bring slowly to 170F then strain out
the grains (put grains in nylon bag to make it easier). Bring liquid to a boil.
Add malt syrup, Malto-Dextrin, & water salts. Bring to a boil. Add Bullion hops
and boil for 45 minutes. Add Irish Moss for next 10 minutes of boil. Add Kent
Goldings hops for final 5 minutes. Remove from heat and add Willamette hops.
Wait 2 minutes. Chill wort. Strain cooled wort into the primary and aerate as
you do so. Top off wort with water to bring level to 5 gallons.
S.G. should be about 1.062. Pitch yeast into wort and cover with airlock.
Domestic Lager
Ingredients in 5 gallon batch:
3.3 lbs (1 Can) Multon & Fison Light Malt Extract (unhopped)
3.3 lbs (1 Can) Multon & Fison Extra Light Malt Extract (unhopped)
1 Cup Crystal Malt (whole)
1 oz Willamette Hop Pellets (boiling)
1/2 oz Kent Goldings Hop Pellets (finish)
1/2 tsp Irish Moss
1 pkg Pilsen Lager Liquid Wyeast
1/2 cup Corn Sugar (bottling)
Put grains in 4 gallons of cold water. Bring slowly to 170F. Leave at 170F
for 30 minutes. Strain out the grains (put grains in nylon bag to make it
easier). Add 2 cans of malt extract. Bring liquid to a boil. Add Willamette
hops and boil for 40 minutes. Add Kent Goldings hops and Irish Moss for 10
more minutes of boil. Chill wort. Strain cooled wort into the primary and
aerate as you do so. Top off wort with water to bring level to 5 gallons.
Add yeast to wort and cover with an airlock.
